Delicious Moong Daal  Sprouts Sabji: A Step-by-Step Recipe

Ingredients

For the Marination

– 1 cup boiled moong sprouts

– 1 tsp Kashmiri red chili powder

– 1/2 tsp turmeric powder

– 1 tsp coriander powder

– 1 tbsp kasuri methi (dried fenugreek leaves)

– Salt to taste

– 1/4 cup Greek yogurt (dahi)

For the Tadka (Tempering)

– 1 tsp oil

– 1 bay leaf

– 1 cinnamon stick

– 1 black cardamom

– 3 green cardamoms

– 4-5 cloves

– Peppercorns (as desired)

– 1/2 tsp cumin seeds (jeera)

– 12-14 garlic cloves (finely chopped or minced)

– 2 onions (chopped)

– Puree of 3 tomatoes

– 1/2 tsp red chili powder

– 1/4 tsp turmeric powder

– 1/2 tsp coriander powder

– 1/2 tsp cumin powder

– Salt to taste

– 3 tbsp cashew paste (blend soaked cashews with water to form a paste)

– Fresh coriander leaves for garnish

Instructions

Step 1: Marinate the Sprouts

1. Combine the Sprouts and Spices: In a mixing bowl, combine the boiled moong sprouts with Kashmiri red chili powder, turmeric powder, cumin powder, coriander powder, kasuri methi, salt, and Greek yogurt.

2. Mix Well: Mix well to coat the sprouts evenly with the spices and yogurt.

3. Let it Marinate: Let the sprouts marinate for 15-20 minutes to absorb the flavors.

Step 2: Prepare the Tadka (Tempering)

1. Heat Oil: In a large pan or kadai, heat 1 teaspoon of oil over medium heat.

2. Add Whole Spices: Add the bay leaf, cinnamon stick, black cardamom, green cardamoms, cloves, and peppercorns.

3. Stir and Aroma: Stir for a few seconds until the spices release their aroma.

4. Add Cumin Seeds: Add cumin seeds (jeera) and let them sizzle.

5. Sauté Garlic and Onions: Add the chopped garlic and sauté until it turns golden brown. Then, add the chopped onions and cook until they become golden and translucent.

Step 3: Cook the Masala

4. Cook the Spices: Cook the spices for a couple of minutes to remove any raw flavor.

Step 4: Combine the Marinated Sprouts
