Ingredients and Method
Ingredients:
- 2 cups Left Over Rice
- 1 tbsp Saacoor Desi Ghee
- 1 tsp urad dal
- 1 tsp chana dal
- 1 tsp mustard seeds
- 2 whole red chilies
- Curry leaves
- 2-3 tomatoes, chopped
- 1/2 tsp turmeric powder
- Salt
- 1 tbsp Podi masala (read the blog for Podi masala recipe)
- Rice
- Coriander leaves, chopped
- 2 tbsp Saacoor Desi ghee (to pour on top)
Method:
- Heat Ghee and Add Spices:
Heat Saacoor Desi ghee in a Kadhai. Add urad dal, chana dal, mustard seeds, chilies, and curry leaves and allow to crackle.
- Add Tomatoes and Spices:
Once done, add the chopped tomatoes to it and cook till they are soft. Add salt and turmeric powder along with homemade Podi masala and stir well.
- Mix with Leftover Rice:
Lastly, add leftover cooked rice and mix well.
- Garnish:
Garnish further with chopped coriander leaves and ghee on the top to enhance the experience of the dish.
