Ingredients and Method

Ingredients:

  • 2 cups Left Over Rice
  • 1 tbsp Saacoor Desi Ghee
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1 tsp mustard seeds
  • 2 whole red chilies
  • Curry leaves
  • 2-3 tomatoes, chopped
  • 1/2 tsp turmeric powder
  • Salt
  • 1 tbsp Podi masala (read the blog for Podi masala recipe)
  • Rice
  • Coriander leaves, chopped
  • 2 tbsp Saacoor Desi ghee (to pour on top)

    Method:

    1. Heat Ghee and Add Spices:
      Heat Saacoor Desi ghee in a Kadhai. Add urad dal, chana dal, mustard seeds, chilies, and curry leaves and allow to crackle.
    2. Add Tomatoes and Spices:
      Once done, add the chopped tomatoes to it and cook till they are soft. Add salt and turmeric powder along with homemade Podi masala and stir well.
    3. Mix with Leftover Rice:
      Lastly, add leftover cooked rice and mix well.
    4. Garnish:
      Garnish further with chopped coriander leaves and ghee on the top to enhance the experience of the dish.
