Ingredients for Gur Papdi
• Melon Seeds – 1/3 cup
• White Sesame Seeds – 1/3 cup
• Dry Coconut (Desiccated) – 1/3 cup
• Edible Gum (Gond) – 1 cup
• Cashews – 1/2 cup
• Almonds – 1/2 cup
• Ghee – 1.5 cups + as required for greasing
• Wheat Flour – 1 cup
• Karkara Aata – 1 cup
• Green Cardamom Powder – 1/2 tsp
• Long Pepper Powder (Peepli) – 1 tbsp
• Ginger Powder (Saunth) – 1 tbsp
• Nutmeg – A pinch (grated)
• Jaggery (Chopped) – as per taste
Step-by-Step Method to Make Gur Papdi
1. Roast the Seeds:
• Heat a pan on high flame, then lower it. Add sesame seeds and roast until they release a nutty aroma. Set aside to cool.
• Roast melon seeds until crispy and add them with sesame seeds. Reserve 1 tablespoon for garnish.
• Grind the cooled seeds into a fine powder and set aside.
2. Toast the Coconut and Nuts:
• In the same pan, roast the dry coconut on low flame until evenly brown and remove.
• Roast cashews and almonds until lightly toasted. Cool and crush them coarsely.
3. Prepare the Edible Gum:
• Grind the edible gum into a fine powder using a mixer.
4. Roast the Flour in Ghee:
• Heat ghee in a kadhai and add both wheat and karkara flours. Roast on low flame for 20-30 minutes until golden brown and nutty. Stir constantly to avoid burning.
5. Combine the Ingredients:
• Add edible gum powder to the roasted flour and mix immediately to let it pop.
• Incorporate the sesame-melon seed powder and chopped jaggery, stirring until the jaggery melts. Add in the roasted nuts and dry spices.
6. Set the Gur Papdi:
• Transfer the mixture to a greased plate. Press evenly with a pav bhaji masher and garnish with reserved seeds. Let it cool slightly before cutting into pieces.
7. Serve and Store:
• Carefully remove each piece and store in an airtight container.
